Meet Red Loft chef Rodrigo

Voor onze vierde Take the City Away nam onze eigen Red Loft chef Rodrigo ons mee naar de smaken van zijn geboortestad São Paulo. Wie bestelde, serveerde op vrijdag 29 april o.a. Braziliaanse pāes de queijo (cheese rolls), bolinhos de bacalhau (kroketjes van bakkeljauw), acarajé /vatapa (fritter gerookte garnaal en pindasaus) en frango caipira com polenta mole et quiabos (stoof van kip, polenta kroketjes, okra, piri piri).

Kan u zichzelf eens voorstellen in 3 zinnen?
My Name is Rodrigo, I'm a Brazilian chef currently based in Gent. I left my country when I was 19. Now, 15 years later, I can say I've lived many adventures. I lived in Barcelona for 3 years and in Berlin for 6 years (where I co-owned a restaurant project with my husband). After that we spent a few years on a Greek island working at a farm-to-table restaurant. Now we're back in Belgium where my husband is from. All this years working with food in different places, shaped the way I perceive food and how I cook (both home and at work). It surely makes me wonder about all the flavors and cultures I’ve yet to discover.

Wie inspireert u?
I’m inspired and influenced by my mom and granny because they are my first culinary references. I’m also inspired by the charisma of Julia Child and the food porn of Nigella Lawson. Nature, food and travelling inspires me too.

Stel dat je een diner mag organiseren met eender wie? Wie zou je uitnodigen en waarom?
If I organise a dinner I'd invite my closest friends because they will surely attend. We'll catch up with each other over something tasty. Food is very bonding.

Wat betekent de kleur rood voor u?
The color red for me is the color of fire and action. Red is blood and danger but also passion and seduction. Red is an Almodovar movie, full of tomatoes, toreros, high heels, red lipstick and drama.
